Bacon Eggs and Home Fries
This is Eleanor’s absolutely favorite meal, every cafe and diner we’ve been to for breakfast she’s had it. It doesn’t really need a recipe, but this site wouldn’t be complete without it!
|Slosh of milk
|4 Potatoes chopped into small cubes
|1 table spoon olive oil
|1/2 stick butter
|1/2 onion chopped
|Clove garlic chopped
|Salt & pepper
- In a bowl whisk the eggs and milk together, season with salt an pepper. Pour into a large saucepan, add 1 table spoon of butter and put to 1 side.
- In a skillet over medium high heat heat the oil and melt the remaining butter, add the onion and garlic, cook for 2 mins
- Add the potatoes and cook stirring regularly for 25 mins or until cook through and crispy.
- When the potatoes are nearly cooked, fry the bacon until crispy, and scramble the eggs!
