Chicken en popillote
It had just gotten really cold and I wanted warm comfort food… Nanna has often talked about cooking chicken this way, so we gave it a go and it was pretty yummy.

Chicken breasts – sliced |
Onion sliced |
Parsnips cut into thin sticks |
Purple & orange carrots cut into thin ticks |
Cabbage finely sliced |
1 cup of chicken stock |
Chardonay |
Oregano |
Red chili pepper flakes |
Salt & pepper |
Parchment paper |
Method
- Cut the parchment paper in to heart shapes
- Liberally sprinkle the chicken breasts with oregano, red chili flakes salt and pepper
- On the parchment paper layer onion, parsnip, carrot, cabbage and top with the chicken
- Starting with the top of the heart, tightly fold the parchment paper over until you are left with a funnel at the end
- Pour in about 1/4 cup of stock and a slosh of wine
- Fold over the end
- Place on a baking tray
- Bake for 25 mins at 400C
- Serve with garlic and rosemary smashed potatos
